Lemon Syllabub—it may sound like a Pokemon character—-but it’s actually a delicious English Dessert dating back to the 16th Century! And YES its still delicious! It even made an appearance on one of my favorite shows, Downton Abbey.

The original version of this dessert was a drink made with cream that was curdled with wine or sherry and sweetened. This modern version is whipped to a glorious thickness and flavored with lemon juice, zest, sugar and your favorite white wine – it’s very light and refreshing—you can whip up this dessert in under 10 minutes. If you wanted to make a kid friendly version, you can substitute apple cider for the white wine.

Lemon Syllabub Recipe

  • Prep time: 10 minutes
  • Serves: 4

Ingredients

  • 1 Cup Heavy Whipping Cream or Double Cream
  • ½ Cup Granulated Sugar
  • ⅓ Cup White Wine or Champagne
  • 2 Tablespoons Fresh Lemon Juice
  • Grated Zest from one Large Lemon, about 1 Teaspoon
  • Grated Nutmeg, optional

Method

  • 1)

    In a small bowl, add ⅓ Cup White Wine, 2 Tablespoons of Fresh Lemon Juice and Grated Lemon Zest, stir and set aside.

  • 2)

    Add 1 Cup of cold Heavy Whipping Cream and ½ Cup of Granulated Sugar into your mixing bowl. Mix on high until it begins to thicken and soft peaks start to form. With the mixer on, drizzle in the wine mixture slowly and beat until stiff.

  • 3)

    Pipe or spoon into your serving cups or bowls. Garnish with more lemon zest or a pinch of grated nutmeg. You can enjoy this dessert immediately or refrigerate it for up to 12 hours before serving.
