When your bananas are nice and freckly, it’s the perfect time to make banana bread! This Instant Pot Banana Bread turns out moist and flavorful, my family loves to enjoy it warm with thick slather of Kerry Gold butter.

I’ve included instructions for the Instant Pot pressure cooker & the Instant Omni Plus Toaster Oven. The Instant Pot version is slightly denser, has a lighter and moist crust. The Instant Omni Plus version rises higher, has a browner crust and lighter crumb texture.

Instant Pot Banana Nut Bread Recipe

Ingredients

  • 1 Cup All Purpose Flour (130g), scooped and leveled
  • ¾ Cup Mashed Bananas (about 2 bananas)
  • 5 Tablespoons Unsalted Butter, room temp
  • ⅓ Cup + 2 Tablespoons Brown Sugar
  • 1 Large Egg
  • 1 ½ Teaspoon Baking Powder
  • ¼ Teaspoon Baking Soda
  • ¼ Teaspoon Kosher Salt
  • ⅓ Cup Chopped Walnuts (optional)

Method

  • 1)

    In a large bowl, combine 1 Cup All Purpose Flour, 1 ½ Teaspoon Baking Powder, ¼ Teaspoon Baking Soda, ¼ Teaspoon Kosher Salt, ⅓ Cup Chopped Walnuts and stir well with a whisk to combine, then set aside.

    Add 5 Tablespoons Unsalted Butter and ⅓ Cup + 2 Tablespoons Brown Sugar into a mixing bowl, mix with the paddle attachment on high until it looks light a fluffy. Add 1 Large Egg and mix until it looks combined and smooth. Add this mixture along with with ¾ Cup Mashed Bananas into the flour mixture. Gently stir until combined – if you’re using the paddle attachment on a Kitchen Aid, use the Stir option for 10 seconds. Lumps are ok, do not over-mix or your bread will end up very dense and gummy.

    Butter the interior of a 7 inch metal bundt pan very well, use a pastry brush or your fingers to get the butter into all the grooves. Pour the batter into the pan. Cover the pan with foil and poke a hole into the foil where the tube opening is.

    ***If you’re baking it in the Instant Omni Plus, you do not need to cover the pan with foil

    INSTANT POT Method: Pour 1 Cup of Water into the Instant Pot and place the trivet into the pot. Place the bundt pan into the pot, seal the lid and choose High Pressure and set for 45 Minutes. When the timer is up, switch the knob to venting and release the steam. Carefully remove the bundt pan and remove the foil. Let the banana bread cool in the pan for about 10 minutes before flipping it out onto a rack or plate. Enjoy with butter!

    INSTANT OMNI PLUS Method: Choose Bake and set at 325°F for 30 minutes with Convection On. Once the oven is done pre-heating, place the bundt pan in. Remove from the Omni, wait 10 minutes, then flip onto a plate or rack. Enjoy with butter!
