This is now my favorite way to enjoy Thanksgiving leftovers – I think it’s even more delicious than Thanksgiving dinner!  You simply use the leftovers you have and wrap them in an egg roll wrapper and deep fry until they are golden and crispy, serve with cranberry sauce and gravy as the dipping sauces.  Everything you love about Thanksgiving in every bite – and the crunch from the wrapper just makes it even more delicious!

Thanksgiving Leftovers Egg Rolls Recipe

  • Prep time: 15 minutes
  • Cook time: 10 minutes
  • Serves: 1-20

Ingredients

  • 8in x 8in Egg Roll / Spring Roll Wrappers
  • Roasted Turkey, shredded
  • Various leftovers like Turkey, Stuffing, Mashed Potatoes, Creamed Spinach, Corn
  • Frying Oil
  • Deep Fry Thermometer
  • 1 Egg + 1 Tablespoon Water, whisked well

Method

  • 1)

    Place the various fillings into the middle of the wrapper, about 4 inches long, shape it into a small log and seal well with the egg wash (see the pic above for the wrapping steps). Lay them on a baking sheet lined with a silpat or parchment paper.

  • 2)

    Use a large heavy bottom pot and fill it with 2-3 inches of frying oil, use a deep fry thermometer to monitor the temp – heat to 365°F. Fry a few Egg Rolls at a time for about 7-10 Minutes or until they are golden brown and crispy. Place them onto a wire rack to drain. Wait until the oil returns to 365°F before frying the next batch. Serve with gravy or cranberry sauce. Enjoy!
