This is a quick and simple way to make Madeleines (petite French butter cakes) using Trader Joe’s Vanilla Cake Mix. The flavor and texture are quite nice, especially for a madeleine batter that’s ready in 5 minutes – they are buttery, have a nice caramelized crust & fluffy interior.

Easy Madeleine Recipe made with Trader Joe's Vanilla Cake & Baking Mix

Ingredients

  • 1½ Cups Joe’s Vanilla Cake Mix, (spooned & leveled / 8oz weight, which is half the box)
  • 2 Large Eggs
  • 1 Stick Unsalted Butter, cubed
  • Powdered Sugar, optional

Method

  • 1)

    Pre-heat your oven to 375°F. Melt 1 Stick of Butter on low heat and let it cool until lukewarm. Add 2 Large Eggs into a blender, blend on low speed for 1 minute, with the blender still on low, drizzle in the melted butter and continue to blend for 1 more minute. (You can also hand whisk if you don’t have a blender, whisk vigorously until it looks bubbly)

    Add 1½ Cups Trader Joe’s Vanilla Cake Mix into a bowl, pour in the egg & butter mixture and stir with a whisk until there are no lumps. Place a heaping 2-Teaspoon dollop of batter into the center of each madeleine mold.

  • 3)

    Bake on the middle rack for 11-13 Minutes. The madeleines are done when the edges are slightly browned and the top humps spring back after lightly pressed with your finger. Invert the pan onto to a kitchen towel, and transfer the madeleines to a wire rack to slightly cool. These tastes best served immediately when they are still warm, dusted with powdered sugar. If you have leftovers, store them in a sealed container. Enjoy!
