It’s blackberry season and if you’re lucky to live in a place with wild blackberries, now is the prefect time to go foraging for them! You can obviously use store bought blackberries, but it feels so much more satisfying when you’ve picked them yourself. This Blackberry Cobbler is very simple and quick to make, but it’s one of the most delicious desserts – my entire family is absolutely crazy over it. The filling is the perfect amount of sweet & tart, the buttery biscuit crumble topping gets crisp and golden brown, take a big scoop of both with vanilla ice cream and it’s a little bite of heaven

Blackberry Cobbler Recipe

Ingredients

BLACKBERRY FILLING

  • 30 oz Blackberries, rinsed and dried well
  • 1 Cup Granulated Sugar
  • ¼ Cup All Purpose Flour

BISCUIT CRUMBLE TOPPING

  • 1⅓ Cup All Purpose Flour
  • 7 Tablespoons Granulated Sugar, divided
  • 6 Tablespoons Salted Butter, freeze for 20 minutes
  • 1 Large Egg, well beaten
  • 1½ Teaspoons Baking Powder
  • 1 Teaspoon Vanilla Extract
  • Pinch of Ground Cinnamon

Method

  • 1)

    Preheat oven to 375ºF. Place 30oz of Blackberries into a 2-quart baking dish. In a bowl combine 1 Cup Granulated Sugar and ¼ Cup All Purpose Flour and sprinkle evenly over the blackberries – use a large spoon to toss the blackberries so they are evenly coated.

    In a large mixing bowl, add 1⅓ Cup All Purpose Flour, 6 Tablespoons Granulated Sugar, 1½ Teaspoon Baking Powder, stir to combine well, add the large beaten egg, 1 Teaspoon Vanilla Extract and use a large cheese grater to grate the 6 Tablespoons of frozen Butter into the flour. Use a fork to combine well, if there’s loose flour, use your hands to lightly knead so it all comes together. Break it up into crumbles and sprinkle evenly on top of the blackberries. Mix 1 Tablespoon of Sugar with a pinch of Cinnamon and sprinkle it on top of the crumble.

    Bake on the middle rack for 45 Minutes, the crumble should look lightly golden. Let it cool for at least 30 minutes before serving. Enjoy with a big scoop of vanilla ice cream!
