Gooey Butter Cake is a classic American recipe that originated in St. Louis in the 1930’s, over the years it’s transformed into this easy and simplified version using cake mix. There are two layers, the bottom is a chewy, buttery vanilla cake that has caramelized edges and the “gooey” topping is made with cream cheese, butter, sugar and eggs. It’s perfect for breakfast with a cup of coffee or serve it with fresh berries as a delicious dessert. I think the texture is actually better the next day, so I make it at night and enjoy it the next morning.

St. Louis Gooey Butter Cake Recipe

Ingredients

  • 16 oz Vanilla Cake Mix
  • 8 oz Cream Cheese
  • 2 Large Eggs, divided
  • 12 Tablespoons Salted Butter, melted and cooled, divided
  • 2 Cups Powdered Sugar, plus more for dusting
  • 1 Teaspoon Vanilla Paste or Extract

Method

  • 1)

    Pre-Heat your oven to 350°F. Fill a large bowl with very Hot water from your sink. Place the sealed package of Cream Cheese into the bowl for 10-15 minutes. This is a shortcut to get it to room temp. Grease a 13x9in baking pan or 9in springform pan with butter or cover the bottom with parchment.

    *Use a 8×8 in or 9×9 in pan if you’d like the cake to be thicker.

    In a mixing bowl, add 1 Large Egg and 8 Tablespoons of melted Butter. Use a stand mixer with paddle attachment on low speed until it looks combined. Add the box of Trader Joe’s Vanilla Cake Mix and mix until it’s smooth. Pour the batter into the prepared baking pan and use a spatula or your hands to  press it evenly into the bottom.

    In a clean mixing bowl, add 8 oz of softened Cream Cheese. Beat until it looks smooth. Add 2 Cups of Powdered Sugar, 1 Teaspoon of Vanilla Paste, 4 Tablespoons of Melted Butter, mix to combine, scrape the bowl to ensure an even mixture. Lastly add the 1 Large Egg and mix on low until the batter is smooth, scrape the bowl. Pour into the baking pan. Bake at 350°F for 40-45 Minutes. The edges should look golden brown. Let the cake cool completely. Before serving, dust a generous amount of powdered sugar on top, then cut into squares. Enjoy with black coffee or tea!
