The perfect summer time dessert, delicious Blueberry Cobbler with a big scoop of Vanilla Ice Cream. I used frozen blueberries and Trader Joe’s Cake mix to make the crumble topping – one of the easiest baked desserts you can make. The blueberries are a perfect balance of sweet & tart, the crumble topping is buttery and crispy, it’s a wonderful combination.
Use a cheese grater to grate the butter into the cake mix

Preheat oven to 375ºF. Place 24 oz Blueberries into a 7x11in / 2 Quart baking dish (you can also use a 13x9in baking dish, but it will turn out thinner). In a bowl combine ½ Cup Granulated Sugar, Zest from a lemon and ⅓ Cup Trader Joe’s Vanilla Cake Mix Cup Trader Joe’s Vanilla Cake Mix and sprinkle evenly over the blueberries – use a large spoon to toss the blueberries so they are evenly coated.
In a large mixing bowl, add the rest of the Trader Joe’s Vanilla Cake Mix, 1 large beaten Egg, and use a large cheese grater to grate the 6 Tablespoons of frozen Butter into the cake mix. Use a fork to combine well, then use your hands to lightly knead so it all comes together. Break it up into crumbles and sprinkle evenly on top of the blueberries, then sprinkle 1 Tablespoon of Sugar on top of the crumble.
Bake on the middle rack for 50 Minutes, the crumble should look golden. Let it cool for about 40 minutes before serving. Enjoy with a big scoop of Trader Joe’s French Vanilla ice cream!
