Here’s my copycat recipe of one of the trendiest & hyped drinks in Los Angeles right now. Erewhon Market’s Coconut Cloud Smoothie created in partnership with influencer Marianna Hewitt – the smoothie costs a whopping $17, but you might not think the price is that outrageous if you gather all the ingredients to make this yourself. It’s made with MALK almond milk, pineapple, banana, avocado, almond butter, vanilla collagen, vanilla stevia, blue magix, and coconut cream – a few of these ingredients have a hefty price tag on their own, so $17 is actually not that crazy for this drink. If you’re used to Jamba Juice type smoothies, just know that this smoothie is not going to be as sweet, but it’s going to be 1000x times more beautiful. Here are a few ingredients you’ll need for the smoothie. I bought the Collagen Peptides at Costco and ordered the Blue Spirulina / Blue Majik online (buy here) Erewhon uses MALK Almond Milk, but any brand will work fine.  Copycat Erewhon Coconut Cloud Smoothie Recipe

When you buy coconut cream for this recipe, make sure it lists guar gum as an ingredient on the can.  If there’s no guar gum, it doesn’t whip up nicely.  You can also save some time by substituting the coconut cream + sugar with So Delicious Cocowhip – it’s in a tub like cool whip and you can usually find it in the frozen section.  I’ve seen it at Target, Sprouts and Whole FoodsCopycat Erewhon Coconut Cloud Smoothie Recipe

Erewhon Coconut Cloud Smoothie Recipe

Ingredients

  • 1 Cup Almond Milk
  • ½ Cup Crushed Ice
  • 1 Teaspoon Almond Butter
  • 1 Cup Frozen Banana Slices (1 Small Banana)
  • 1½ Cup Frozen Pineapple Chunks
  • ¼ of a Small Avocado
  • 3 Tablespoons Collagen Peptides
  • ¾ Teaspoon Blue Spirulina / Blue Majik
  • ½ Teaspoon Vanilla Extract
  • ⅔ Cup Coconut Cream, refrigerated overnight
  • 2 Packets Stevia or 4 Teaspoons Sugar

Method

  • 1)

    Add ⅔ Cup Coconut Cream and 2 Packets Stevia into a mixing bowl. Whisk on high speed for 5 minutes. Add 2 Tablespoons of the coconut cream to the bottom of the serving glass and reserve 2 Tablespoons to top the smoothie. Place the rest of the coconut cream into a blender. Sprinkle in ½ Teaspoon of Blue Spirulina / Blue Majik down the inside of the glass and set aside.

    Add 1 Cup Almond Milk, ½ Cup Crushed Ice, 1 Teaspoon Almond Butter, 1 Cup Frozen Banana Slices, 1½ Cup Frozen Pineapple Chunks, ¼ of a Small Avocado, 3 Tablespoons Collagen Peptides, ¼ Teaspoon Blue Spirulina / Blue Majik, ½ Teaspoon Vanilla Extract into the blender. Blend on high speed until smooth. Pour into the serving glass and top with the reserved coconut cream. Enjoy!
