Matcha Mochi Waffles Recipe

I love matcha + mochi so these Matcha Mochi Waffles are the perfect treat! The waffles are bouncy, chewy & the matcha flavor is very prominent. I topped it with vanilla ice cream, a sprinkle of matcha powder, blackberries & candied strawberries (recipe here).

Sencha Organic Matcha is my current favorite matcha powder, it’s sourced from tea growers in Kyoto, Japan.  The price is reasonable for daily drinking and perfect for baking with – the color is beautiful and the flavor is great

Matcha Mochi Waffles Recipe

Ingredients

  • 1½ Cups Sweet Rice Flour / Mochiko
  • 1½ Tablespoons Matcha Powder
  • 2 Tablespoons Corn Starch
  • ¾ Cup Granulated Sugar
  • 1 Cup Whole Milk
  • 3 Large Eggs
  • 6 Tablespoons Butter, melted
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Vanilla Extract

Method

  • 1)

    In a bowl, add 1½ Cups Sweet Rice Flour, 1½ Tablespoons Matcha Powder, 2 Tablespoons Cornstarch, ¾ Cup Granulated Sugar, 1 Teaspoon Baking Powder and stir well with a whisk to combine. Set aside

  • 2)

    In a another bowl, add 1 Cup Milk, 3 Large Eggs, 6 Tablespoons melted Butter, 1 Teaspoon Vanilla Extract, whisk until the eggs are evenly mixed in. Add this mixture to the flour mixture and stir well until the batter is completely smooth.

  • 3)

    Pre-heat your waffle iron. Pour the batter onto the hot waffle iron, cook according to the manufacturer’s directions & to your preferred doneness. Place on a rack to cool for about a minute before serving. Top with berries or ice cream for an amazing treat (recipe for candied strawberries here). Enjoy!

    Hi! Would the recipe work if I replace the butter with coconut oil?
