Vietnamese Curry is a dish near and dear to my heart. I love it and tend to make huge batches that could possibly last for days of leftovers. I was in need of something creative to do with my curry, so I combined my love of baking with curry. I invented these Vietnamese Curry Puffs to use my leftovers, but they are so good it would be worth it to make curry just for these! The buttery and flaky texture of the pastry pairs perfectly with the creamy flavorful curry. I use store bought puff pastry so these are very easy to make. My kids eat these up so fast I usually have to make a double batch.

Vietnamese Chicken Curry Puffs Recipe

Ingredients

  • 1 Cup Vietnamese Chicken Curry, (diced small and chilled in the refrigerator)
  • 1 12 in x 12 in Sheet of Puff Pastry
  • 1 Large Egg
  • 1 Tablespoon Water

Method

  • 1)

    Unthaw your frozen Puff Pastry overnight in the refrigerator or on the kitchen counter for about 35 minutes. Cut it into 9 even pieces, they should be about 4in x 4 in each.

  • 2)

    Pre-heat your oven to 400°F

  • 3)

    Your curry should be cold from the refrigerator, take all the large pieces of chicken, carrots and potatoes and dice small, all the pieces should be about ⅓ or ½ inch, you’ll need about 1 Cup of diced curry.

  • 4)

    Spoon about 1½-2 Tablespoons off the curry onto the cut puff pastry and fold it diagonally so it forms a triangle. Press the edge together then use a fork to crimp and seal the edges.

  • 5)

    Place them on a baking sheet with parchment paper and refrigerate for 10 minutes.

  • 6)

    Whisk 1 Large Egg and 1 Tablespoon of Water together. Take the puffs out of the refrigerator and brush the egg wash onto the tops of the puffs.

  • 7)

    Place the baking sheet into the 400°F oven and bake for 16 – 19 minutes or until the tops are golden brown. Let them cool about 5 minutes before serving. If you have leftovers, refrigerate them and reheat in a toaster oven before serving. Enjoy!
