Use Enriched Long Grain Rice, this is one of the few types of rice that you don’t have to wash.

Instant Pot Mexican Rice Recipe

Ingredients

  • 1½ Cups Enriched Long Grain Rice, (don’t wash or rinse)
  • 2 Cups Water
  • 2 Tablespoons Vegetable Oil
  • ½ Cup Tomato Sauce
  • 1½ Teaspoons Knorr Tomato Buillion with Chicken Flavor
  • ½ medium sized Onion, finely diced
  • ¼ Teaspoon Garlic Powder
  • 1 Jalapeño with seeds removed, diced (optional)

Method

  • 1)

    Pour 2 Tablespoons of Oil into the Instant Pot, choose Sauté on High, once it says Hot add 1½ Cup of Rice, sauté until the rice looks light golden, stir constantly (takes about 5-7 minutes) – sautéing helps the rice kernels keep it’s shape, without this step you end up with mushy rice. Hit Cancel to turn off Sauté mode, add the diced Onions, diced Jalapeño and stir for another minute.

  • 2)

    Add 2 Cups of Water, ½ Cup of Tomato Sauce, 1½ Teaspoons Knorr Tomato Bullion, ¼ Teaspoon Garlic Powder and stir. Seal the Instant Pot lid and choose High Pressure for 4 minutes. When the timer is up, wait 10 minutes then switch the knob to venting, once the pin has dropped, open the lid and fluff the rice. Taste & season with a little bit of salt if needed. Enjoy!

    I love the ease of cooking with the IP. I would love to make this again. I halved the recipe and did not use tomato sauce and added cumin and pepper. I used a cup of water and followed the rest of the instructions. The rice was a bit bitey and wondered if I should have added an additional half cup of water. Your thoughts, please? I know this will be a keeper if I can just make it less bitey. You are awesome in providing these wonderful recipes!

      Hi Vida, you’re welcome! The tomato sauce is part of the cooking liquid needed for this recipe, that’s why your rice had more of a bite. Try adding ½ Cup of Water (this is for the full recipe), use ¼ Cup if you’re only making half the recipe. Hope this helps 🙂
