This is an easy recipe for Instant Pot Mexican Rice that tastes like just as good as the restaurants – it’s fluffy, perfectly seasoned – a must have side dish for any Mexican meal you’re cooking. Check out my recipe for Instant Pot Refried Beans here.
Knorr Tomato Bouillon with Chicken Flavor – find it near the regular chicken bouillon at your local market or order here
Use Enriched Long Grain Rice, this is one of the few types of rice that you don’t have to wash.
Sauté the rice until it’s lightly golden, don’t skip this step or your rice will turn out mushy instead of fluffy

I love the ease of cooking with the IP. I would love to make this again. I halved the recipe and did not use tomato sauce and added cumin and pepper. I used a cup of water and followed the rest of the instructions. The rice was a bit bitey and wondered if I should have added an additional half cup of water. Your thoughts, please? I know this will be a keeper if I can just make it less bitey. You are awesome in providing these wonderful recipes!

Hi Vida, you’re welcome! The tomato sauce is part of the cooking liquid needed for this recipe, that’s why your rice had more of a bite. Try adding ½ Cup of Water (this is for the full recipe), use ¼ Cup if you’re only making half the recipe. Hope this helps 🙂
