This recipe is inspired by one of my all time favorite restaurants— Matiki Island BBQ in Anaheim CA. Matiki is a Hawaiian Style BBQ restaurant that serves these amazing beef ribs grilled right over charcoal in the building! You can smell the smoke for miles—which always gets my appetite all worked up if I’m in the vicinity. The problem with Matiki is the horrendous California traffic. For me to get there I have to budget at least 40 minutes — which is crazy considering I’m not that far!

When I don’t want to deal with the nightmarish California traffic I make a copycat of their teriyaki beef ribs at home with the help of my Instant Pot. The beef ribs are very tender, then I finish them on a charcoal grill to add a delicious smokey flavor. You could also broil them in your oven to char them. At Matiki, they serve it with Potato Mac Salad, which I think is the perfect side dish.

Ingredients

  • 5 Pounds Beef Back Ribs
  • ½ Cup Soy Sauce
  • ¾ Cup Granulated Sugar
  • ⅔ Cup Water
  • ¼ Teaspoon Ground Black Pepper
  • ¼ Teaspoon Garlic Powder

Method

  • 1)

Make the Teriyaki Sauce by adding ½ Cup Soy Sauce, ¾ Cup Granulated Sugar, ⅔ Cup Water and ¼ Teaspoon of Garlic Powder and ¼ of Ground Black Pepper into a sauce pan. Heat on medium until it boils then turn the heat to low so the mixture can simmer for 5 minutes. Set aside and let it cool to room temperature.  Reserve ¼ Cup of the Teriyaki Sauce for basting – the rest will be used for the marinade.

  • 2)

Cut your rack of beef ribs into individual ribs and place them into a large baking dish. Pour the cooled Teriyaki Sauce over the ribs, making sure they are coated in the sauce. Place into the refrigerator to marinate for at least 2 hours or overnight.

  • 3)

Place the beef ribs into your Instant Pot, stacking them is fine. Pour the marinade from the baking dish into the Instant Pot. Seal the Instant Pot lid and switch the knob to Sealing. Set the Instant Pot for High Pressure / Manual for 19 Minutes. Once the timer is up and you hear the beep, wait an additional 10 minutes while it releases the pressure naturally. Switch the knob to Venting to release the rest of the steam.

  • 4)

Remove the ribs and place them on a large plate. Using a basting brush, cover the ribs with the reserved teriyaki Sauce. These are best when finished on a charcoal BBQ, sear them over direct heat for 1-2 minutes, then move them to indirect, cover the bbq and let then smoke for about 5 minutes. If you don’t have a BBQ or it’s too cold outside, place them onto a foil lined baking sheet and broil them for about 5 Minutes, keep an eye on them so they don’t burn. Brush them again with the teriyaki sauce before serving. Enjoy!
