Let’s make Yuzu Butter Mochi using the Trader Joe’s Mochi Cake Mix + Trader Joe’s Yuzu Ice Cream – the batter is super simple to mix up and you end up with butter mochi that is satisfyingly chewy & bouncy. I love the textural difference between the soft, chewy centers with the crisp edges (edges only stay crisp on the day you make them, the next day the edges get softer) You can also swap out the yuzu ice cream for any other ice cream flavor.  Watch my 30 second recipe video here (please subscribe to my YouTube)

Butter Mochi is a very popular treat in Hawaii, it’s made with Mochiko (Japanese Sweet Rice Flour) and a few other ingredients typically used to make cake. It’s the perfect example of modern day Hawaiian cuisine (local food) which is a fusion from multiple ethnic groups.

    Pre-heat oven to 350°F. In a large mixing bowl, add ¾ Cup Boiling Water, 1½ Cups Yuzu Ice Cream, 4 Tablespoons melted Butter and stir until the ice cream is melted. Add 2 Large Eggs, stir with a whisk until combined, add the entire box of Trader Joe’s Mochi Cake Mix and stir until it’s smooth.

    Line an 8 x 8 inch pan with parchment pape, pour the batter into the pan and bake at 350°F for 70 minutes or until the top & edges are golden brown. Let it cool to room temp before cutting into squares. Enjoy!
