Edamame and Avocado Salad, a unique and delicious salad made with edamame, avocado, cucumber, cherry tomatoes, red onion and carrots.  It’s dressed in a very simple vinaigrette and topped with furikake seasoning.

Edamame and Avocado Salad Recipe

Ingredients

  • 12 oz Shelled Edamame, blanched in salted water for 1 minute
  • 3 Mini Cucumbers / Japanese Cucumbers, sliced
  • 2 small Avocados, cut into cubes
  • 10 Cherry Tomatoes, cut in half
  • 1 Tablespoon Chopped Red Onion or Shallot
  • ½ Cup Shredded Carrots
  • Furikake Seasoning

SIMPLE VINAIGRETTE

  • 3 Tablespoons Olive Oil
  • 2 Tablespoons + 1 Teaspoon Rice Vinegar
  • 2 Teaspoons Sugar
  • ½ Teaspoon Fine Sea Salt

Method

  • 1)

    In a large mixing bowl, make the Vinaigrette Dressing by combining 3 Tablespoons Olive Oil, 2 Tablespoons + 1 Teaspoon Rice Vinegar, 2 Teaspoons Sugar and ½ Teaspoon Fine Sea Salt and whisk well. Add the edamame, cucumbers, avocados, cherry tomatoes, chopped red onion, shredded carrots and gently toss to coat the vegetables in the dressing. Place onto to serving plates and top with Furikake Seasoning. Enjoy!
