The most famous treat in New Orleans during Mardis Gras is King Cake, it’s an oval-shaped glazed brioche filled with cinnamon, sugar, cream cheese and typically decorated with purple, yellow and green sugar sprinkles.  This is my delicious variation, Ooey Gooey King Cake – which is a Gooey Butter Cake with cinnamon sprinkled on top of the crust and decorated King Cake style. There are two layers, the bottom is a chewy, buttery vanilla crust that has crisp caramelized edges and the “gooey” topping is made with cream cheese, butter, sugar and eggs. The baby is optional, it’s a fun tradition to have a baby “hidden” in a King Cake and the baby will bring luck and prosperity to whoever finds it. Or some people say whoever finds the baby has to host the next Mardis Gras celebration and provide the next king cake.   I just put it on top for decoration, I don’t want anyone cracking a tooth by accidentally biting down on one 😂Ooey Gooey King Cake Recipe

Ooey Gooey King Cake Recipe

Ingredients

  • 15-16 oz Boxed Vanilla Cake Mix
  • 8 oz Cream Cheese
  • 2 Large Eggs, divided
  • 12 Tablespoons Salted Butter, melted and cooled
  • 1¾ Cups Powdered Sugar
  • 2 Teaspoons Ground Cinnamon
  • 1 Teaspoon Vanilla Paste or Extract
  • Purple, Yellow and Green Sanding Sugar Sprinkles

Method

    Pre-Heat your oven to 350°F. Fill a large bowl with very Hot water from your sink. Place the sealed package of Cream Cheese into the bowl for 10-15 minutes. This is a shortcut to get it to room temp. Grease the bottom and sides of a 9in springform pan with butter

    In a mixing bowl, add 1 Large Egg and 8 Tablespoons of melted Butter. Use a mixer on low speed until it looks combined. Add the box of Trader Joe’s Vanilla Cake Mix and mix until it’s smooth. Press the batter into the bottom of the springform pan and use a spatula or your hands to spread it evenly. Dust or sprinkle on 2 Teaspoons Ground Cinnamon over the crust.

    In a clean mixing bowl, add 8 oz of softened Cream Cheese. Use a mixer on medium speed until it looks smooth. Add 1¾ Cups of Powdered Sugar and mix on low speed until the sugar is absorbed, add 1 Teaspoon of Vanilla Paste, 4 Tablespoons of Melted Butter, mix on low to combine, scrape the bowl to ensure an even mixture. Lastly add 1 Large Egg and mix on low until the batter is smooth, scrape the bowl

    Pour the batter into the pan and bake at 350°F for 45 Minutes. The edges will look golden brown. Let the cake cool completely. Decorate by sprinkling Purple, Yellow and Green Sanding Sugar onto the top of the ooey gooey cake, run a knife along the edge of the crust then release from the springform pan. Enjoy with black coffee or cafe au lai!
