Ingredients

  • ½ Cup Jasmin Rice
  • ½ Cup Sticky Rice, aka Sweet Rice or Glutinous Rice
  • 4 Cups Chicken Broth
  • 2½ Cups Water
  • ½ Pound Ground Pork or Chicken
  • 4 Century Eggs, quartered
  • 1 Tablespoon Thinly Sliced Ginger
  • 2 Tablespoons Cooking Oil
  • 1¼ Teaspoon Kosher Salt, divided
  • ¼ Teaspoon Granulated Sugar
  • ¼ Teaspoon Sesame Oil
  • ½ Teaspoon Corn Starch
  • ⅛ Teaspoon Ground White Pepper
  • 1 Tablespoon Water

GARNISHES

  • Green Onions, chopped
  • Chinese Donuts (Dầu Cháo Quẩy / Youtiao)

Method

  • 1)

Place ½ Pound of Ground Pork or Chicken into a bowl and add ¾ Teaspoon of Kosher Salt, ¼ Teaspoon of Sugar, ¼ Teaspoon of Sesame Oil, ½ Teaspoon of Corn Starch, ⅛ Teaspoon of Ground White Pepper and 1 Tablespoon of Water and stir well to mix everything together.

  • 2)

Add 2 Tablespoons of Cooking Oil to the Instant Pot and choose Sauté on high heat. Add the ground pork and cook for about 2-3 minutes breaking it up into medium size pieces. Add 4 Cups of Chicken Stock and 2½ Cups of Water. Scrape the bottom of the pot to remove any bits that are stuck to the bottom. Add ½ Cup of Jasmin Rice, ½ Cup of Sticky Rice, ½ Teaspoon of Kosher Salt, and 1 Tablespoon of Thinly Sliced Ginger. Give it a stir and close the Instant Pot lid.

  • 3)

Press Cancel to turn off Sauté mode. Choose High Pressure / Manual and set it for 20 Minutes, when the time is up, wait 10 Minutes for a natural pressure release. Switch the knob to venting, when the pin drops open the lid. Stir and taste, add more seasoning if needed. If you prefer a thinner texture add a little more water. You can add the century eggs into the pot or add them to each serving bowl. Garnish with chopped green onions, ground black pepper and more sliced ginger and serve Chinese Donuts (Dầu Cháo Quẩy / Youtiao) on the side. Enjoy!
