Corn Casserole, a simple and delicious side dish that will pair well with most meals!   The flavor is sweet & savory, the texture is buttery, moist and tender – it’s really fantastic.  It’s similar to southern spoon bread or Chi Chi’s corn cake – this recipe is a basic starting point, you can customize it by adding shredded cheese or even a small can of chopped green chiles to add a spicy kick.  The Trader Joe’s Cornbread Mix is sweeter than Jiffy Corn Muffin Mix – so choose the mix according to your preference. EASY Corn Casserole Recipe

Ingredients

  • 2 Boxes Jiffy Corn Muffin Mix, or 1 Box 15 oz Trader Joe’s Cornbread Mix
  • 16 oz Super Sweet Cut Corn, defrosted
  • 1 Cup Whole Milk
  • 1½ Cups Sour Cream
  • 1 Cup Salted Butter (2 sticks)
  • 2 Large Eggs

Method

  • 1)

    Pre-heat oven to 350°F. In a large sauce pan, melt 1 Cup of Salted Butter, then add the 1 Cup Milk, 1½ Cups Sour Cream, 2 Large Eggs and whisk well until it’s well combined. Add 16 oz Trader Joe’s Super Sweet Cut Corn and 2 Boxes Jiffy Corn Muffin Mix (or 1 box Trader Joe’s Cornbread Mix) and stir until the batter is smooth.

    Butter a 13×9 in baking dish. Pour the batter into the dish and bake for 40-45 minutes – the top should be just set. Serve immediately, Enjoy! Leftovers can be refrigerated in an airtight container for up to 5 days.

    Just to clarify: is it 2- 15oz boxes of Trader Joe’s cornbread mix?

    Do you think I can use the Krusteaz mix from Costco and it should the same? Thanks!

      Hi Linda, if the mix is around 15-16oz, I think it should work fine for this recipe.

    Excited to make this for Thanksgiving! Do you think it will be fine to make overnight, refrigerate it, and reheat the whole pan the next day?

      Hi Annie, yup you can make this ahead of time, just underbake a little (30 mins) then you can reheat the next day.

      Yes, you can make this ahead of time. I would just slightly underbake it (maybe around 30 mins) – that way it won’t be overdone once you reheat it
